1. Cook rice. (Here’s how.) Fluff and set aside.
2. In a non-stick pan or wok, fry cauliflower florets on high gas, in oil, until golden brown. Season and salt to taste.
3. While cauliflower is frying, gently heat menestra in a small pot. Serve immediately with rice and cauliflower. Makes two portions.
This is a very quick and very easy meal when you want something savory and filling, but you don’t feel like meat. Or like cooking.
Experiment with your water. I have found that Ecuadorian rice cooks quickly (10 minutes or under) and becomes gummy if I use the 1:2 rule. I brought my ratio down to 1:1.5 and that seems to do the trick.

I keep Weber KC BBQ Rub in my kitchen and will sometimes use it instead of the Chef en Casa. The Weber gives my cauliflower a nice smoky flavour. I’m not sure if you can find this in Ecuador. I brought mine from Canada.
